Green Bean Delivery + Promo Code

       Who doesn't love fresh, organic produce? I'm guessing most of you would say yes....haha...well just this week I got an entire bin of it delivered to my door. You might be Bean Delivery! You make an account on their site... then you get to customize what you get in your bin that week..choosing over 40 fruits/vegetables/herbs that are in season. They also carry organic groceries from local farms. Meats, side dishes, nuts, condiments..etc.

    You can also schedule what weeks you want a delivery...and skip weeks if you want. The bin was promptly delivered to my door around 4:30pm..just in time for dinner...It was like getting an awesome & healthy surprise! The bin came insulated with an ice pack so it would stay fresh on my porch, even on hot days....Best part..I just leave the bin on my door for them to pick up on my next delivery. I was really pleased with my veggies/fruits...they were all really fresh and the fact that I got 2 pounds of brussel sprouts kind of made my week! The produce is so fresh and good..I decided I would make a recipe using several of the vegetables all in one skillet.

1 zucchini-chopped
1 large tomato-chopped
1 large onion-chopped
1 cup quinoa
2 cups chicken stock/broth
1 1/2 cups corn (frozen or fresh)
1 can black beans
1/2 cup cilantro-chopped
1 can chopped green chile's
1 package low sodium taco seasoning
1 package lean ground turkey
3 tbs. olive oil

How to-
Coat bottom of skillet with olive oil.
Heat skillet to medium/high heat. 
Add ground turkey..and cook until done.
Reduce heat to medium.
Add quinoa & chicken stock. Cook 15 minutes or until quinoa is done.
Reduce heat to Low/Medium. Add all remaining ingredients. Cover with lid.
Heat an additional 10-15 minutes or until vegetables are tender.
