Toasted Coconut Caramel Brownies


        When I was snowed in last week I got a craving for something sweet...luckily I had all the ingredients to make homemade brownies...I wanted to jazz them up though....So I topped them with toasted coconut, caramel & chocolate chips....They turned out so amazing I had to share the recipe with all of you....

Toasted Coconut Caramel Brownies

Ingredients:
1/2 cup all purpose flour
1/2 cup unsweetened cocoa powder
1/4 tsp. salt
1/4 tsp. baking powder
1/2 cup melted butter
1 cup granulated sugar
2 eggs
1 tsp. vanilla extract
1 cup shredded coconut
3 tbs. butter
1/2 cup caramel bits
1/4 cup half & half
1/4 cup chocolate chips
1/4 cup white chocolate chips

Instructions:

Preheat oven to 350 degrees 

Grease an 8x8 baking dish with cooking spray

In a bowl, mix the flour, cocoa, salt & baking powder
In a separate bowl mix the melted butter, sugar, eggs & vanilla (I mixed mine in my food processor)

Fold in the dry ingredients and mix well. 

Pour into the baking dish and bake for 25-28 minutes

While the brownies are baking....melt the remaining 3 tbs. of butter in a pan on medium to high heat. Once it is melted, dump the coconut into the pan. Mix the coconut into the butter and cook until it is toasty and brown. Set aside.

Once the brownies are done...Melt the caramel bits mixed with the half and half in a bowl the microwave for 2-2 1/2 minutes.

Sprinkle the toasted coconut over the brownies. Spread the regular chocolate & white chocolate chips over the brownies. Drizzle the caramel over the brownies. 

These are so good, it should be illegal. Please make these...you will be so happy that you did!
