Roasted Red Pepper & Feta Chicken

 We are stuck inside today because of the snow & freezing temperatures. I've enjoyed it though. I got a lot done and made one of my favorite recipes for dinner. Its really easy and so yummy! 

Ingredients

4 Chicken Breasts
1 cup Crumbled Feta Cheese
1 Red Pepper
2 cups Bread Crumbs
1 tsp salt
2 tsp pepper
2 tsp garlic powder
1 Egg
1/4 Cup water
Olive Oil

       First, preheat your oven to 450 degrees. Line a baking sheet with foil and spray with olive oil  spray. Cut your red pepper into small strips and place the strips on your baking sheet. Roast in preheated oven for 30 minutes, turning red pepper strips every 10 minutes. Once the peppers are done reduce oven to 400 degrees. 

      While the pepper is roasting, start with tenderizing your chicken breasts with a meat tenderizing mallet. Tenderize till the chicken is thin & flat. 

       Beat your egg is a bowl and add water. In a separate bowl mix bread crumbs, salt, pepper & garlic powder. Coat your chicken breasts in the egg wash. After that toss them in the bread crumb mixture, coating them all over.

       Heat olive oil in a pan (covering the bottom of the pan). Cook the chicken on both sides until just browned. Place them on a greased baking sheet. Bake in the oven for 15 minutes. After 15 minutes take the chicken out and place your red pepper strips along with the feta cheese on top of the chicken. Bake for an additional 10 minutes. Enjoy!

    I served this along with roasted brussel sprouts and butternut squash soup. It was good comfort food for a cold, cold day. Let me know if you try this recipe. I know you won't be disappointed.

  2. So I just asked Chris if he would eat this and he said yes! Score! He's pretty picky but has been getting a lot better in the trying new things department!
